O’Flynn won the 2015 Canadian Culinary Championship while executive chef at The Westin Edmonton and prior to that had been executive chef at London’s Milestone Hotel. To run The Guild’s kitchen, O&B has hired Edmonton-born Ryan O’Flynn, who echoes Walsh’s commitment to Canadian cuisine. Their Corporate Executive Chef is Anthony Walsh, a multiple award-winning talent who leans heavily on the local, indigenous flavours of Canada. ![]() Oliver & Bonacini (known as O&B) owns and operates 11 restaurants in the Toronto area, including heavy hitters Auberge du Pommier, Canoe and the about-to-be-opened Lena. Many of those other projects haven’t been small potatoes. “Let’s just say it’s more than twice as expensive as any other project we’ve ever worked on.” The biggest project ever for Oliver & Bonacini, the busy Toronto-based restaurant, catering and event group. (Note: There is no entrance to The Bay through The Guild but all the other Bay entrances remain unchanged.) That’s not counting a London-style bar that will fill the main floor’s southwest corner this fall or the re-working of the 6th floor cafeteria space into a grand banquet hall. All in, that’s in the range of 500 seats. ![]()
